VEGGIE GNOCCHI BAKKEN • Ik denk dat dit pas de tweede keer is dat ik gnocchi eet? mooi…


I think this is only my second time having gnocchi? Pretty much winged this one!

In a pan add 2 red onions, 1 red pepper, sliced mushrooms, 2 thinly sliced garlic cloves, 1 grated carrot and 4 chopped sausages (we used the richmond meat-free ones). Season generously with salt & pepper. Cook until the veg has softened and sausages have browned. Add 2 cans chopped tomatoes, a handful of chopped basil and 2 packets of gnocchi (we used 1 pack of regular and 1 pack of spinach gnocchi). Simmer until the sauce has thickened and the gnocchi has softened. Then add 50g light cream cheese (optional).

Add the mixture to a baking dish and cover with a ball of sliced mozzarella, 30g breadcrumbs and salt & pepper. Grill until the cheese has melted and the breadcrumbs start to brown.
