SWEET & SOUR TOFU 🌱📛
This was a nice quick a simple dinner! I made the recipe by adapting an old Hello Fresh recipe I got years ago.
For 2 servings:
1 pack smoked tofooco, 2 peppers, 1 onion, 2 spring onions, 2 cloves garlic, 1 tbsp cornflour, 4 tbsp soy sauce, ½ veg stock pot, 1 tbsp rice vinegar, 1 tbsp sweetener, 1 tbsp maple syrup, ¾ cup bulgur wheat, salt & pepper
Bring 300ml water to the boil with the ½ stock pot. Add the bulgur wheat, turn off the heat and leave for 25 mins with a lid on until all the water has absorbed. Meanwhile, chop up all the veg.
Chop the tofu into cubes and coat in the cornflour. Spray a pan with frylight and cook the tofu until browned – set aside.
Spray the same pan and add the onion, garlic and spring onion. After a minute, add the peppers and cook for 5 mins until softened. Add the rest of the ingredients, mix and simmer until a sticky sauce forms. Add the tofu back in and combine. Serve it all up between 2 plates!
