GREEN MAC N CHEESE

I found this one in a random veggie magazine and it was something a bit different!

Serves 6:
400g macaroni, 1 litre skimmed milk, 50g reduced fat margarine, 75g plain flour, 175g reduced fat cheddar, 50g pecorino, 100g spinach, 1 tsp mustard powder, 1 whole broccoli, 100g frozen peas, 1 slice of stale bread blitzed into breadcrumbs, 1 tbsp dried basil

Heat a pan and add the flour, margarine, milk, salt and a generous amount of black pepper. Mix together until thick (doesn’t matter if its lumpy). Then add the mustard powder, spinach and cheeses (save some for the top). Meanwhile, cook the macaroni in salted boiling water. Cook the broccoli in a separate pan of boiling water.
Transfer half the broccoli into the cheese sauce and then blend it all together.
Put the sauce back into the large pan, add the rest of the broccoli and frozen peas & stir together. Tip into a large baking dish & top with the left over cheeses, breadcrumbs & basil. Grill until breadcrumbs are golden brown & crispy.

Mine worked out at 568 cals per portion
