Risotto van kaas, ham en erwten Een van onze absolute favorieten! We hebben dit recept…

Cheese, ham and pea risotto 🍚One of our absolute favourites! We’ve got this recipe years ago from the BBC website and we’ve always used mascarpone in it but I’ve realised that it uses up so many unnecessary syns & cals (not a Hex). So, we decided to try swap it out for quark and it literally tastes the exact same! Absolute win 😂 we always add in extra veg to ours to bulk it up a bit more!

For 4 portions:
300g arborio rice, 180g ham, 1 red onion, 150g frozen peas, 1¼l chicken stock, 100g reduced fat cheddar, 2 garlic cloves, 1 tsp mustard powder, 175g mushrooms, 100g fat free quark

1. Place a large casserole dish over a medium heat and cook the onions for 5 mins until softened.
2. Stir in the garlic and risotto rice and stir for 1 min. Pour in the stock, season and bring to the boil, then cover and simmer for 15 mins until the rice is nearly done.
3. Add the peas, ham, mustard powder, cheese and quark and cook for a further few mins until the cheese has all melted.
4. Divide into 4 portions, season and top with an extra little pinch of cheese.
