VEGGIE BEEF RAMEN 🍜

This was absolutely unreal πŸ‘Œ completely vegetarian but leave the egg out to make it vegan! I loosely ed a mobkitchen recipe but made a few changes to make it veggie, add more vegetables and make it lower in cals to fit my needs!_

Boil 4 eggs for 6 minutes and then leave in an ice bath for 5 mins. Set aside.

Beef mixture: add Β½ tbsp olive oil to a hot pan. Fry off 500g quorn mince, 1 grated carrot, 8 sliced spring onion, 5 chopped mushrooms, 2 tbsp soy sauce, 2 cloves garlic, sliced ginger, chilli flakes, salt & pepper

Broth: in a pan add 1 veg stock pot, 1 red wine stock pot and 1.5 litres boiling water. Mix until stock pots have dissolved. Then add 5-spice, garlic flakes, some more soy sauce, chilli flakes, salt & pepper. Add the noodles and boil until cooked. Remove the noodles and add the pak choi. Cook until softened & remove.

Assemble it all together! Ladel broth into a bowl, add the noodles, beef mix, pak choi, sliced radishes and sliced the egg in half and lay on top. Garnish with sesame seeds, sliced spring onions, chilli flakes, salt & pepper
