Tofu udon bowl 🍜🌱 this was so quick and easy to make! We pressed the tofu and then cut it into triangles, covered with a tbsp cornflour and a tsp salt and pepper seasoning and then fried in a pan until crispy. Meanwhile, chop up whatever veg you want (we used spring onion, peppers, mushrooms, carrot and edamame beans) and fry until softened. For the sauce, add 4 tbsp light soy sauce, 1 tbsp rice vinegar, 1 tbsp maple syrup, 1 tbsp sriracha and some fresh ginger. Add 600g fresh udon noodles and the tofu and mix everything together. Cook for a further 5 mins and then divide into 4 portions.
