Today’s lunch was a quinoa bowl.
Who lives quinoa as much as I do?😍
The base is cooked quinoa. I added beetroot, cucumber, tomato, an apple, carrots, tuna, feta, walnuts, and capers🤩
For the dressing, I mixed olive oil with white wine vinegar and lemon juice.
I did not even season it because somehow it tasted so good without adding something😂
Again high in good carbs, protein, and fats😌
