I saw this recipe on Tik Tok and it’s such a quick and easy one! I didn’t really measure – I just winged it really!
Ingredients: 4 garlic cloves, chilli flakes, sesame oil (I used around 2 tbsp), 2 packs of Tesco Plant ‘beef’ strips, 1/2 cucumber sliced, frozen broccoli florets, Edamame beans, lots of soy sauce, brown sugar, lots of sliced spring onions

Soak 4 portions of udon noodles in boiling water for 4 mins and then transfer to cold water until needed. Heat the sesame oil in a wok and then add the chilli flakes, garlic and spring onions and fry for a few minutes until fragrant. Add the fake beef strips and fry until browned. Add the brown sugar and soy sauce, then add the rest of the veggies and udon noodles and mix. Add more soy sauce if needed. Divide between 4 and garnish with cucumber and some pickled ginger.

It’s been a while! Had a real rollercoaster attitude with food over the last few months and been trying to find a happy medium and understand what I want to get out of my relationship with food. I’ve come into 2022 with a lot less pressure on myself, taking baby steps and more attainable goals. Im no longer calorie counting and staying clear from SW or any sort of ‘diet’. I don’t want my only goal to be to ‘lose weight’ because ultimately that’s not what will bring me happiness. Instead I’m trying to slowly add and build healthy habits, one step at a time, and hopefully over time see positive benefits from it mentally and physically.
Healthy habits I’m starting with:
~ join in on 2 dog walks a week
~ go to the gym once a week
~ eat higher protein meals and snacks (already noticing such a difference with my appetite)
~ go to bed earlier!! (Not managed this yet 👀)
~ only buy clothes that fit comfortably, not with the intention of losing weight to fit into them
~ cook at least two of our meals during the week (completely stopped cooking over the last few months and let work consume me)
