So this doesn’t sound like the most appetising meal (and tbh I’ve been putting off making it for 2 days because of this) but trust me when I say it works really well 😵 I really wanted to try out a cauliflower curry and I found this one in the Mowgli book (swipe for recipe). The flavours in this are so good and the crispness of the eggs is just 😙👌 I only used 1 tbsp rapeseed oil to fry the eggs and used frylight for the rest.

For the curry + 75g basmati rice:
☆ 509 cals
☆ 72.9g carbs
☆ 14.9g fat
☆ 23.2g protein
