Here is the promised ”what I eat in a day”. This is just for inspiration what works for me doesn’t have to work for you☺️

Breakfast:
Baked oats with a runny heart
-> recipe tomorrow

Lunch:
Pickled herring with potatoes, beetroot, lima beans, and herbal quark

Snack:
A green smoothie made out of baby spinach, lemon, pomegranate seeds, orange and ginger

Snack:
Apple nachos with skyr, walnuts, cashews, cinnamon, and a plum

Dinner:
Tarte flambée (recipe is posted in one of my previous posts)
