GOAT’S CHEESE RISOTTO

This is an old Hello Fresh recipe i got a few years ago that’s still going strong!

Ingredients for 4:
320g risotto rice, 250g cherry tomatoes, 4 garlic cloves, 1 diced onion, 2 sliced peppers, 1 veg stock cube, 4 tbsp tomato puree, 2 tbsp shaoxing wine, 2 tbsp red wine vinegar, 1 log soft goat’s cheese, 30g finely chopped parsley

Slice the peppers and place them and the cherry tomatoes on a baking sheet with frylight, salt, pepper and some sweetener. Bake for 20 mins at 180°C.
Heat the onion in a large pan until softened. Add the garlic, rice, some of the parsley and a generous amount of pepper and mix together. Add the shapxing wine and stir until absorbed. Add the tomato paste, red wine vinegar and ⅓ stock and stir until absorbed. Meanwhile, coat the goat’s cheese in the parsley and season with pepper. Gradually add the rest of the stock and stir until the rice has completely cooked. Finely chop the roasted pepper slices and add these and the tomatoes to the pan & combine. Slice the goat’s cheese log and serve up.
