Creamy meat-free sausage rigatoni 😍 I tried out the richmond_foods meat free sausages and if I didn’t know they were veggie, I honestly wouldnt have known the difference! This worked out at 2 syns plus ½ HexA per portion

For 6 portions: 1 pack Richmonds meat free sausages, 500g dried rigatoni, 1 red onion, 100g spinach chopped, 100g mushrooms, 1 tin chopped tomatoes, 2 minced garlic cloves, 5 leaves basil sliced, 4 tbsp passata, 350g halved cherry tomatoes, 80g quark, reduced fat cheddar to top

Cook the rigatoni, drain and set aside. Chop the sausage into chunks and cook in a pan until browned & then set aside. Chop up all your veg and start cooking off the onion and garlic in a separate pan. When softened, add the rest of the veg and mix together. Cook for a further few mins. Add the chopped tomatoes, passata and basil and simmer for about 5 mins. Add the sausages and pasta to the veg and mix all together. Turn off the heat to add the quark and combine. Divide into 6 portions and top with 20g reduced fat cheddar per portion!
